Azores Pineapple Extra Jam With Lemongrass

The pineapple from Azores/S. Miguel from Portugal (Ananas comosus L. Merril, Cayene variety) is produced in glass greenhouses using traditional cultivation techniques: application of “fumes” and the use of “warm beds” based on vegetable matter. After a period of two years, from planting to harvesting, a fruit with unique aroma and flavor qualities is obtained. The culture was introduced in S. Miguel around 1840-50, being commercialized in Europe for more than a century. Cylindrical shaped fruit, slightly tapered, with a strong orange peel and yellow pulp. The pineapple pulp has a translucent yellow color, a sui generis bittersweet flavor and a very pleasant aroma. Lemongrass (Cymbopogon citratus) appears spontaneously in the savannas of southern India, Indonesia and Malaysia, and is widely cultivated in Africa and Brazil, as a medicinal and spice plant, supplying the cosmetic, pharmaceutical and food industries. Used in tea, it results in a very pleasant drink with a strong lemon flavor, which works as a digestive and can accompany meals. Can be used to improve bad mood and heartburn. It also has a hepatoprotective and antispasmodic action on the digestive tract. It has calming properties, so it is consumed to improve sleep, along with linden.

Fig and Orange Extra Jam with Cinnamon

Depending on the season of production, figs are called lampos (May and June) and vintage (July/September) . It is a fruit with well-marked organoleptic characteristics, with great nutritional qualities, being rich in vitamins B and C and mineral salts (especially calcium, phosphorus and potassium). Cinnamon has a warm, pleasantly sweet yet intense aroma. Its flavor is warm and fragrant, reminiscent of cloves and citrus. It presents a light brown color, with touches of bronze. For 200 years, the Portuguese controlled the monopoly on the commercialization of this spice, originally from Sri Lanka.

Pumpkin and Orange Jam with Rosemary and Eucalyptus Honey, Cinnamon and Port Wine

Rosemary and eucalyptus honey, more aromatic than other honeys, has a light brown tone and a more open aroma and palate. Originating in North and Central America, where it is still one of the mainstays of food, the pumpkin belongs to the same family as the melon and watermelon (cucurbits). The shape of the pumpkin is variable, but it is usually ovoid or oblong. The rind is usually orange, but it can have other colors depending on the species. The bright orange color of the pumpkin contains a high content of carotenes, particularly beta-carotene, with antioxidant action. Beta carotene is then converted into vitamin A in the body. Almonds - Trás-os-Montes Region, Portugal.

The Galega Olive from Beira Baixa, obtained through manufacturing processes and conservation techniques that have been passed on from generation to generation and that are maintained to this day, is considered a traditional product in this region, and has long occupied an important place both in the nutrition of its inhabitants and in the development of the local economy.

São Tomé Dark Chocolate Spread with Cherry and Brandy

Origin of São Tomé dark chocolate: Democratic Republic of São Tomé and Príncipe was discovered in 1470 by Portuguese navigators, João de Santarém and Pedro Escobar. It was a Portuguese colony until July 12, 1975, when the islands gained their independence. Cocoa is another of the points that unites these two peoples, since it was Portugal that introduced these plantations to the islands. São Tomé ended up being known as the “Cocoa Island”. For this reason, the culture of these two islands continues to be linked by a common past and language. Flavor Traits: 'São Tomé' dark chocolate is bitter, with an aroma of coffee and blackberries, a chocolate with a unique and intense flavor, made with customers who prefer pure and traditional chocolate in mind. Despite having a similar appearance to other dark chocolates, it has a flavor that is nothing like these, and that makes us travel through new sensations. It is 100% cocoa and, unlike the dark chocolates on the market, it has a very strong density and flavor. When we taste it for the first time, we are transported to an absolutely unexpected twist of the senses. It is neither sweet nor bitter, its texture fills your mouth with a paste filled with unique flavor notes. Origin of Fruits: Pineapple from Azores – São Miguel Island in Azores - Portugal, Cherry from Fundão – Fundão - Portugal, Orange from Algarve – Algarve - Portugal, Passion Fruit from Madeira – Madeira Island Portugal, Organic Blueberries and Blackberries – V. N. Famalicão in Northern Portugal.
