Rosemary Honey with Apple and Cinnamon
Clear honey, with a mild and aromatic flavor, is collected by bees in the abundant fields of Rosmaninho, located on the lower slopes of the Serra da Malcata, a nature reserve, located between the village of Penamacor and the city of Sabugal, with 21,000 hectares. This area was chosen due to its isolation and richness in wild flowers, heather and rosemary, from which bees extract high quality honey. The Portuguese rosemary are all small woody shrubs, easily identifiable by their aroma and by the violet, lilac or white spikes that lay in the small crown. Rosemary, a very honey-bearing plant, in favorable years allows hives to store up to 5 kg of this honey in a single day. The dehydrated apple, of Portuguese origin, is finely cut into slices, and results from a drying process that reduces the moisture content of the fruit to 2%, in a controlled environment, without the addition of sugars, dyes or preservatives, resulting in a 100% natural product.
Green Tea with Jasmin
Ideal when served with scones with ‘Fundão’ cherry jam with brandy or with macarrons with ‘São Tomé’ dark chocolate with a Passion Fruit filling.
Cow Cheese, Aged 30 days, Dom Villas
It is recommended to taste it sliced and at room temperature.

Origin of raw materials
Rainha Cláudia’ Plum Extra Jam with Lemon Thyme
Cultivated in the Alto-Alentejo interior region for centuries, the “Rainha Cláudia Verde” plum variety has acquired its own specificity, because of the ecological conditions of the region, which make it different from that produced in other regions. This perfect adaptation to the soils and climate of the region makes it possible, for example, to grow it practically without the use of pesticides, with most orchards in perfect ecological balance. The name Rainha Claudia (Queen Cláudia) (1499-1524) was given to her in honor of the daughter of Anne of Brittany and Louis XII, the Duchess of Britannia, who became the first wife of King Francis I of France. Lemon thyme is part of the mint family and is the leaf of a low-growing shrub. The leaves are tiny and greyish green, with a dry, delicate lemon scent. Its main nutrients are Calcium, Fiber, Iron, Magnesium, Potassium, Zinc, Vitamins A, B6 and C. This aromatic herb is produced in organic production, in Vila Nova de Gaia, Portugal, thus having a more intense aroma and flavor.
Fig and Orange Extra Jam with Port Wine
Depending on the season of production, figs are called lampos (May and June) and vintage (July/September) . It is a fruit with well-marked organoleptic characteristics, with great nutritional qualities, being rich in vitamins B and C and mineral salts (especially calcium, phosphorus and potassium). Thin, colorful and shiny rind, high juice content, sweetness and unique organoleptic characteristics are some of the characteristics of orange from Algarve.
Negrinha do Douro Olive Paste with Spices
The “Negrinha do Douro” olive, of Protected Domination of Origin (PDO), is grown in olive groves on the steep slopes of the Douro Valley region, northern Portugal, in a hot, dry climate and on schist soils. This olive, round and smooth, with a firm consistency, weighing an average of 3 to 5 grams each, has a yellowish-green to violet-black color, depending on the state of maturation. It is harvested manually on the slopes of the Douro Valley.
