‘São Tomé’ Dark Chocolate Spread with Blueberry and Port Wine

‘Bravo de Esmolfe’ Apple Extra Jam with Cinnamon

’Bravo de Esmolfe’ Apple (PDO) is an apple with unique characteristics, extremely aromatic and juicy, sweet and at the same time acidic. It has an oblong-conical shape, white pulp and its whitish skin and sometimes has pink spots. This regional variety, known since the 19th century. XVIII, is originally from the village of Esmolfe (Penalva do Castelo, Portugal) and was obtained from a tree planted from a seed. As its fruits are very popular, grafts were obtained that spread this variety to several fruit production areas, especially in the Beira Alta region and in part of Cova da Beira.

  • Origin of São Tomé dark chocolate: Democratic Republic of São Tomé and Príncipe was discovered in 1470 by Portuguese navigators, João de Santarém and Pedro Escobar. It was a Portuguese colony until July 12, 1975, when the islands gained their independence. Cocoa is another of the points that unites these two peoples, since it was Portugal that introduced these plantations to the islands. São Tomé ended up being known as the “Cocoa Island”. For this reason, the culture of these two islands continues to be linked by a common past and language.
  • Flavor Traits: 'São Tomé' dark chocolate is bitter, with an aroma of coffee and blackberries, a chocolate with a unique and intense flavor, made with customers who prefer pure and traditional chocolate in mind. Despite having a similar appearance to other dark chocolates, it has a flavor that is nothing like these, and that makes us travel through new sensations. It is 100% cocoa and, unlike the dark chocolates on the market, it has a very strong density and flavor. When we taste it for the first time, we are transported to an absolutely unexpected twist of the senses. It is neither sweet nor bitter, its texture fills your mouth with a paste filled with unique flavor notes.
  • Origin of Fruits: Pineapple from Azores – São Miguel Island in Azores - Portugal, Cherry from Fundão – Fundão - Portugal, Orange from Algarve – Algarve - Portugal, Passion Fruit from Madeira – Madeira Island Portugal, Organic Blueberries and Blackberries – V. N. Famalicão in Northern Portugal.

Harvest: 2017

Grapes: Bical (40%), Maria Gomes (35%), Chardonnay (10%), Arinto (10%) and Baga (5%).

Vinification: After a very delicate pressing of the grapes, harvested between early and mid-September, the must was fermented for 15 days in stainless steel vats at controlled temperature. The elaboration, following the classic method, began in May 2017 with the draught, with the re-fermentation taking place in a cellar for 15 days at 16ºC, followed by a period of aging in bottle on lees.
