Origin of raw materials
Blackberry Extra Jam with Lavender
The blackberry is a fruit of Asian origin that was later imported to Europe in the 17th century, before being cultivated in other continents. Perhaps because it is a very fragile fruit, its production was largely reduced to domestic production. The blackberry (Rubus fruticosus) is the fruit (pseudoberry) of shrubs commonly known as brambles, of the Rosaceae family. Their shape gives them a very delicate texture that almost melts in your mouth. They have a sweet fragrance with a subtly acidic touch. Lavender is a medicinal plant, also known as Lavândula or Spikenard, widely used to fight stomach problems or treat allergy to insect bites. Lavender serves to help in the treatment of anxiety, poor digestion, allergy to insect bites, tiredness, sleep problems, gastric irritation, flatulence, nervous colitis, nervous dyspepsia, poor circulation, low blood pressure and physical exhaustion.
Rocha Pear and Redcurrant Jam with Melissa and Pink Pepper
Pear Rocha do Oeste PDO is an exclusively Portuguese variety, mostly produced on the Central West Coast of Portugal, with a production area of approximately 10,000 ha. Climatic factors and the expertise of the people of the West are decisive conditions for obtaining this product with exceptional organoleptic qualities, appreciated and recognized worldwide. Rocha Pear PDO – Protected Designation of Origin – has been recognized by the Community as a traditional, quality product that forms an integral part of the Portuguese Cultural Heritage. Currants come from a bush and there are different cultivars (different types of the same plant) that produce it. These bushes at a stage of maturity can yield about 3 to 4 kg of currants for each one. Gooseberries are usually ready to be picked between mid and late summer. The bush reaches heights of 1m to 2m, produces a greenish-yellow flower. Gooseberries grow on the branches of the bush, being a bright red fruit. Pink peppers Aroeira-Reda, Aroeira-pimenteira or poivre-rose are popular names of the species Schinus terebinthifolia, a tree native to South America of the Anacardiaceae family.
São Tomé Dark Chocolate Spread with Blackberry, Hazelnut and Nutmeg
- Origin of São Tomé dark chocolate: Democratic Republic of São Tomé and Príncipe was discovered in 1470 by Portuguese navigators, João de Santarém and Pedro Escobar. It was a Portuguese colony until July 12, 1975, when the islands gained their independence. Cocoa is another of the points that unites these two peoples, since it was Portugal that introduced these plantations to the islands. São Tomé ended up being known as the “Cocoa Island”. For this reason, the culture of these two islands continues to be linked by a common past and language.
- Flavor Traits: 'São Tomé' dark chocolate is bitter, with an aroma of coffee and blackberries, a chocolate with a unique and intense flavor, made with customers who prefer pure and traditional chocolate in mind. Despite having a similar appearance to other dark chocolates, it has a flavor that is nothing like these, and that makes us travel through new sensations. It is 100% cocoa and, unlike the dark chocolates on the market, it has a very strong density and flavor. When we taste it for the first time, we are transported to an absolutely unexpected twist of the senses. It is neither sweet nor bitter, its texture fills your mouth with a paste filled with unique flavor notes.
- Origin of Fruits: Pineapple from Azores – São Miguel Island in Azores - Portugal, Cherry from Fundão – Fundão - Portugal, Orange from Algarve – Algarve - Portugal, Passion Fruit from Madeira – Madeira Island Portugal, Organic Blueberries and Blackberries – V. N. Famalicão in Northern Portugal.
