Negrinha do Douro Olive Paste with Spices
The “Negrinha do Douro” olive, of Protected Domination of Origin (PDO), is grown in olive groves on the steep slopes of the Douro Valley region, northern Portugal, in a hot, dry climate and on schist soils. This olive, round and smooth, with a firm consistency, weighing an average of 3 to 5 grams each, has a yellowish-green to violet-black color, depending on the state of maturation. It is harvested manually on the slopes of the Douro Valley.
Eucalyptus Honey with ‘Passa’ Pear
Originating from the nectar of eucalyptus flowers, it is aromatic and beneficial for health. Eucalyptus honey has a light brown tone and a more open aroma and taste, which combines delicately with other ingredients. With immense health benefits, eucalyptus honey is anti-inflammatory, antiseptic, antibacterial and stimulating. The raisin pear comes from the S. Bartolomeu pear trees, fruit trees of a regional variety, produced in new and intensive orchards. After a set of processes that have been refined and perfected from generation to generation, a high quality “gourmet” product results from an inland area of our country. It is a sweet and nutritious fruit, produced mainly in the municipalities of Oliveira do Hospital, Seia, Tábua, Nelas, Gouveia, Mangualde, Santa Comba Dão and Viseu. They are harvested in August, and immediately afterwards, peeled by hand. The fresh pears, after peeling, are placed in the solar oven individually and separated, on trays, where they spend, as a rule, six days of direct exposure to the sun. This drying process causes the expected changes in the taste, color and texture of fresh pears in raisins. After solar drying, the fruits are ready to be squashed. The result is a reddish brown raisin pear with unique organoleptic properties, elastic, sweet and very tasty.
