Bravo de Esmolfe Apple Extra Jam with Mint and Port Wine

The Bravo de Esmolfe Apple (PDO) is an apple with unique characteristics, extremely aromatic and juicy, sweet and at the same time acidic. It has an oblong-conical shape, white pulp and its whitish epidermis sometimes has pink spots. This regional variety, known since the 19th century XVIII, is originally from the village of Esmolfe (Penalva do Castelo, Portugal) and would have come from a tree first cultivated from a seed. As its fruits are very popular, grafts were obtained that spread this variety to several fruit production areas, especially in the Beira Alta Region and in part of Cova da Beira.

Fig and Orange Extra Jam with Port Wine

Depending on the season of production, figs are called lampos (May and June) and vintage (July/September) . It is a fruit with well-marked organoleptic characteristics, with great nutritional qualities, being rich in vitamins B and C and mineral salts (especially calcium, phosphorus and potassium). Thin, colorful and shiny rind, high juice content, sweetness and unique organoleptic characteristics are some of the characteristics of orange from Algarve.

Pumpkin and Orange Jam with Rosemary and Eucalyptus Honey, Cinnamon and Port Wine

Rosemary and eucalyptus honey, more aromatic than other honeys, has a light brown tone and a more open aroma and palate. Originating in North and Central America, where it is still one of the mainstays of food, the pumpkin belongs to the same family as the melon and watermelon (cucurbits). The shape of the pumpkin is variable, but it is usually ovoid or oblong. The rind is usually orange, but it can have other colors depending on the species. The bright orange color of the pumpkin contains a high content of carotenes, particularly beta-carotene, with antioxidant action. Beta carotene is then converted into vitamin A in the body. Almonds - Trás-os-Montes Region, Portugal.

Strawberry Extra Jam with Port Wine and Chilli

Strawberries are a delicious way to protect your body. They are rich in antioxidants and therefore strengthen the body's defenses and prevent cardiovascular diseases. They also have high levels of water and potassium which have a mild diuretic effect. Port wine, originating in the Douro region (Portugal), is aged in wood, and during its aging it gains greater aromatic complexity, thus showing the aromas of dried fruits, such as walnuts or almonds, and acquiring aromas of wood, coffee, chocolate and honey. The Chilli, of intense red color, is a spice with a pungent flavor. The spiciness of the seeds causes a burning sensation triggered by the spiciness. Responsible for releasing substances such as endorphins, produced by the brain and which give a feeling of well-being. They also increase heart rate and body temperature, which is why it is considered one of the most aphrodisiac ingredients.

São Tomé Dark Chocolate Spread with Blueberry and Port Wine

  • Origin of São Tomé dark chocolate: Democratic Republic of São Tomé and Príncipe was discovered in 1470 by Portuguese navigators, João de Santarém and Pedro Escobar. It was a Portuguese colony until July 12, 1975, when the islands gained their independence. Cocoa is another of the points that unites these two peoples, since it was Portugal that introduced these plantations to the islands. São Tomé ended up being known as the “Cocoa Island”. For this reason, the culture of these two islands continues to be linked by a common past and language.
  • Flavor Traits: 'São Tomé' dark chocolate is bitter, with an aroma of coffee and blackberries, a chocolate with a unique and intense flavor, made with customers who prefer pure and traditional chocolate in mind. Despite having a similar appearance to other dark chocolates, it has a flavor that is nothing like these, and that makes us travel through new sensations. It is 100% cocoa and, unlike the dark chocolates on the market, it has a very strong density and flavor. When we taste it for the first time, we are transported to an absolutely unexpected twist of the senses. It is neither sweet nor bitter, its texture fills your mouth with a paste filled with unique flavor notes.
  • Origin of Fruits: Pineapple from Azores – São Miguel Island in Azores - Portugal, Cherry from Fundão – Fundão - Portugal, Orange from Algarve – Algarve - Portugal, Passion Fruit from Madeira – Madeira Island Portugal, Organic Blueberries and Blackberries – V. N. Famalicão in Northern Portugal.

Negrinha do Douro Olive Paste with Spices

This olive, round and smooth, with a firm consistency, weighing an average of 3 to 5 grams each, has a yellowish-green to violet-black color, depending on the state of maturation. It is harvested manually on the slopes of the Douro Valley.
