Vinification: The hand-picked grapes were vinified according to the traditional method of Port Wine. After gentle crushing with partial destemming, alcoholic fermentation with maceration follows, which allows for the greatest possible extraction of the skin components. Fermentation takes place under controlled temperature and is stopped by the addition of wine spirit at the moment considered ideal by the winemaker, considering the grape varieties, degree of maturation and desired sweetness. The final balance between the body and aroma of Port Wine comes from the combination of the different characteristics of the multiple varieties of grapes used.
Maturation: The wine stays in the Douro where the cold of winter helps to deposit the lees. The following spring, after being cleaned, it is transported to the Ferreira cellars in V.N.Gaia and placed in oak barrels where it will age over several years, acquiring the incomparable style of the Ferreira brand. During this period, the wines are cared for by the oenology team who accompany their aging and act with blending, refreshments and corrections whenever the tasting determines it. The final blend is obtained after a selection of wines with their own characteristics and ages between 2 and 5 years that allow the unique identity of Porto Ferreira Tawny to be maintained and an average age of 4 years.
