Black Pork Ham Salad with Island Cheese, Fig and Pear Jam

A mixture of flavours from Portugal that simply leaves us wanting to repeat. This is a perfect match for any spring or summer lunch. An explosion of flavours, black pork ham from Alentejo with cheese from the island of São Jorge, dried figs from Trás-os-Montes and a sweet sauce of Rocha do Oeste Pear with ‘Douro’ Muscatel… simply unique and 100% Portuguese.

Ingredients for the emulsion:

Method of preparation:

  1. Drizzle the toasted bread with the tube of Extra Virgin Olive Oil with Green Peppercorns meia.dúzia®;
  2. Place the aromatic salad with wild arugula in a salad bowl;
  3. Prepare the emulsion with ‘Douro’ Muscatel, the ‘Rocha’ Pear Extra Jam with ‘Douro’ Muscatel meia.dúzia® season with salt, mix well and add to the salad;
  4. Place the island cheese slices on top of the figs, the toasted bread and finally the ham;
  5. Finally, as a topping over the ham and cheese, the ‘Rocha’ Pear Extra Jam with ‘Douro’ Muscatel meia.dúzia® to taste.
