The perfect cod dish to serve at Christmas dinner and surprise the family.

Ingredients
- 4 soaked cod fillets
- ~200 ml of olive oil
- 2 big garlic cloves
- 2 onions
- 3-4 bay leaves
- 1 Red pepper
- 250g of turnip greens
- Negrinha do Douro Olive Paste with Spices (to taste)
- Oven baked potatoes
Method of preparation:
- Place the cod in a deep pan and cover half a piece with olive oil;
- Add the garlic and bay leaf and let the cod confit over low heat for about 10 minutes;
- Remove the cod and add, in the same pan, the onion cut into half moons and the red pepper cut into thin strips;
- Let it brown and season with salt and pepper;
- Separately, place small peeled potatoes on a tray, seasoned with salt, pepper, and paprika and roast until golden;
- In a platter, arrange the onion and pepper, and cover with cooked greens;
- Add the candied cod, the Negrinha do Douro Olive Paste with Spices (to taste) and also the baked potatoes;
- Bake in the oven for 10 minutes and it's ready to serve!
Suggestion: As a side dish, serve a salad of fresh spinach, orange wedges, toasted pine nuts and dried cranberries.
