Ingredients
- 4 Rocha pears
- 250 ml red wine
- 250 ml Port wine
- zest of ½ orange
- zest of ½ lemon
- 4 tablespoons of brown sugar
- 1 cinnamon stick
- 1 star anise
- 4 clove heads
- chilli to taste
- nutmeg to taste
- 1 tube of ‘Rocha’ Pear and Redcurrant Jam with Melissa and Pink Pepper meia.dúzia®
- 4 lemon ice cream portions
Method of preparation:
- Peel 4 firm rock pears, slightly cut the base and leave the peduncle;
- With the pears arranged, combine the ingredients for the syrup in a pan;
- In a saucepan, combine the ingredients for the syrup and start with 250 ml of red wine, followed by 250 ml of port wine;
- Add the 4 tablespoons of brown sugar, 1 cinnamon stick, 1 star anise, 4 heads of cloves, the piri-piri and the grated nutmeg;
- Finish with a pinch of salt, the zest of half an orange and half a lemon, and a little lemon juice;
- Stir well, insert the Rocha pears and put the pan on the heat for 30 minutes;
- Turn the pears so that they absorb the flavour of the syrup;
- Remove the pears and let the sauce cook for another 10 minutes;
- Serve the Rocha Pear with a scoop of lemon ice cream, drizzle with the syrup and finish with the 1 tube of ‘Rocha’ Pear and Redcurrant Jam with Melissa and Pink Pepper meia.dúzia®
